With the onset of spring, we are ready to drink light, crisp wines, and we have bottled two great sippers that you’ll want to uncork as soon as these Colorado snowstorms have run their course.
Sauvignon blanc is back! But you’ll need to act quickly if you want to snag some. We only made 70 cases of this beauty, most of which will be allocated to our May wine club selection. Between ten and 20 cases will be available after the club has made their choices. Want first dibs? Join the club at either of our tasting rooms! Our sauvignon blanc was picked early, only the second white to be picked during last year’s harvest. It was the only white wine that we pressed as whole clusters. This means that instead of de-stemming the grapes, we just dumped entire clusters into the press. This technique gives the wine more body than most sauvignon blancs, including our previous vintages. Most people are familiar with acidic New Zealand-style sauvignon blancs, but this one is on the other end of the spectrum, resulting in a more oily, complex wine. Think French sauvignon blanc or fumé blanc; in fact, we added new French oak staves into this wine for about five days to give it some of those qualities.
We also bottled Touch of Red last month. Unlike some of our single varietal wines, we try to keep this wine’s flavor consistent from year to year. We start with 30% dry rose base wine plus 10% syrah to give it a deeper color and more body, then we add 34% juice of merlot. The merlot was pressed during harvest and never fermented; we just kept it as juice to sweeten this wine. Then we added a little white wine to top it all off and made the sweet Touch of Red we love to pair with spicy Indian fare.
